1 onion, chopped
1/4 c. olive oil
2 tomatoes, chopped
4 cloves garlic, chopped
1 small bay leaf
1/2 tsp. dried basil
1 tsp. dried oregano
1/4 c. fresh parsley, chopped
Salt and pepper to taste
1 lb. shrimp, peeled
1/2 lb. feta cheese
1/2 c. black olives
1 lb. angel hair pasta

Directions:
Directions:
Saute onion in olive oil until soft. Add tomatoes, garlic, bay leaf, basil, parsley, salt/pepper to taste and oregano. Cook 4-5 minutes. Remove vegetables from skillet with slotted spoon, leaving juices behind. Spread vegetables in bottom of 8x8x2 baking dish. Simmer juices, add shrimp and cook approximately 2 minutes (until shrimp turn pink). Add cooked shrimp and juice to baking dish. Crumble feta on top and arrange olives. Bake @ 475º for 10 to 15 minutes. Pour over cooked angel hair pasta.
