2 tsp. fresh rosemary, chopped
2 tsp. fresh thyme, chopped
2 tsp. kosher salt
1 tsp. freshly ground black pepper
4 lbs. English style beef short ribs
4 cups diced onions
1 cup diced carrots
2 T. chopped garlic
1 cup red wine
1 cup beef or chicken stock
Salt and pepper to taste

Directions:
Preheat oven to 350º. Combine seasonings. Toss ribs with the spice mixture and arrange them on the bottom of a Dutch oven. Spread onions, carrots, and garlic over the meat; then pour in the red wine and stock. Cover and bake 1 hour. Remove lid and stir so meat is on top of the vegetables, and bake uncovered another hour. Stir at the 30 min point to help everything brown evenly. Check to see if there is still liquid in the pot, if not add stock or wine. Replace lid and cook 30 min. more. Sample meat, if not done, cover and cook another 30.
