1 chicken
1/4 c. celery diced
2 medium onions
1/8 c. fresh garlic
1 c. fresh green beans chopped into 1/4 inch pieces
1 medium red pepper chopped
1 medium tomato chopped
2 medium carrots chopped
8 chicken bouillon cubes
2 c. rice uncooked

Directions:
Directions:
Stew chicken with celery, 1 onion and garlic. Bone chicken. Saute one onion, beans, peppers, tomato and carrots. Mix together in large saucepan bouillon cubes, rice, chicken and 4 c. water or broth. Simmer uncovered until rice is soft, 10 minutes on high heat, 10 minutes on medium and remainder of time over low heat. Add more liquid if necessary and if desired add achiote for color.
