4 c flour
1/2 tsp salt
1 c water (approximately)
2 eggs
1 tsp sugar
1 lb goat cheese
4-5 tsp unsalted butter
kosher salt for sprinkling
Canola or peanut oil for frying

Directions:
Directions:
Combine all ingredients except cheese, using enough water to make a soft dough, Set aside.

Cut cheese into strips 1/2 x 2 1/2 inches. Divide dough into four parts. Roll each piece of dough as thin as possible, cutting into 1/2 inch strips. Wind dough strips around cheese, attempting to cover completely. Place approximately 1 1/2 inches of oil in a medium pan and preheat to 350º Fahrenheit. Fry wrapped cheese until golden brown, turning onto paper towels to drain. Sprinkle with salt while hot. Serve immediately.
