Cookies:
1 cup soft shortening
3/4 cup sugar
1 cup cooked carrots, mashed
2 eggs
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cup shredded coconut

Frosting: (mix all ingredients together in bowl)
1/3 cup soft butter
3 cups powdered sugar
3 tbsp. orange juice
1-1/2 tbsp. orange rind, grated

Directions:
Mix shortening, sugar, carrots and eggs. Sift flour, baking powder and salt and stir into shortening mixture. Add coconut. Drop about 2” apart on a greased cookie sheet. Bake at 400 degrees for 8 – 10 minutes. Remove from oven when you can touch center and leave no imprint. Frost. Makes 4 dozen.
