1/3 c. shortening
1 c. sugar
1 large egg
1 tsp. vanilla
2 tsp. baking powder
1/2 tsp. salt
2/3 c. milk
1 1/2 c. flour
1 1/2 to 2 c. fresh or well drained canned fruit (pineapple, peaches, apricots or cherries)
1/4 c. butter, melted
1/2 c. brown sugar

Directions:
Directions:
Stir brown sugar into melted butter. Put in bottom of round cake pan. Arrange fruit in the pan and set aside. Stir together flour, baking powder, and salt; set aside. Cream shortening, add sugar. Add eggs, beating well. Beat in vanilla. Alternately add flour mixture and milk to butter mixture. Spread batter over fruit in prepared pan. Bake in 350º for 35 to 40 minutes.
