1 whole, fresh, ripe pineapple.
2 pints raspberries
2 pints blackberries
2 pints blueberries
15-20 fresh, hulled strawberries
1/2 cup honey
3/4 cup to 1 cup champagne

Directions:
Directions:
Wash and dry all the berries and cut the strawberries into quarters.

Combine all the fruit in a mixing bowl and toss with the honey, ensuring each piece of fruit is completely coated. Pour into serving bowl and chill until time to serve. Just before serving, pour the champagne over the fruit and gently toss to mix well.

Milo Lenton, a former caretaker at Camp Capers was the inspiration for this recipe. I first tasted this on a Stephen Minister Retreat weekend when we lived in San Antonio and were going to St. Luke's.

The thing that impressed me most about it was was the champagne and honey. I'm particular about the type of fruit I use, leaving out pears, apples and bananas. Leaving those out reduces the volume considerably, so if you need a lot, it can be rather expensive to make when the berries are more scarce, but doing it the way it's written is pretty impressive if you're asked to bring something to a dinner party or special occasion.
