1 9" baked pie crust, cooled
4 Ruby Red Grapefruit, sectioned and strained
1 c. sugar
1 3/4 c. water
2 T. cornstarch
1/8 tsp. salt
1 3oz. box strawberry Jello
Whipping cream

Directions:
When sectioning grapefruit with a shape knife, be sure to remove all the membrane. Cut each slice in half and drain in a strainer or colander. Cook sugar, water, cornstarch, and salt until thickened and clear. Add Jello and stir until dissolved. Pour into a flat dish and chill until mixture begins to set., about 25 minutes. Add grapefruit, mix, and pour into cooled pie shell. Chill for at least two hours before serving. Top each serving with whipped cream

When Harold came home raving about this pie I could not imagine it, and resisted for about a year. Then one day I decided to surprise him with it, and oh my goodness!! It is truly delicious....sweet, tart, and what isn't good topped with whipped cream!!
