1 Pork Tenderloin
Prepared Mustard
Red Cayenne Pepper
Salt and Pepper

Directions:
Directions:
Season the tenderloin with salt and pepper, and coat with prepared mustard. Sprinkle lightly with red cayenne pepper to taste. Wrap in foil and place on a baking pan. Bake at 350º for 45 minutes to an hour, or until fork tender. Do not overcook. It can get too dry, if you don't watch it. Remove foil and broil on both sides just to brown it a little. The meat will be a little pink. Let it cool before you slice it.

Pork Tenderloin can be served hot or cold and makes a wonderful New Years Day meal with black-eyed peas and all the fixings. This recipe was given to me by Nancy Walker.
