6 lbs. Pork Baby Back Ribs

6 tbsp. Brown Sugar
1 tbsp. Paprika
2 tsp. Salt
1 1/2 tsp. Monosodium Glutamate
1 1/2 tsp. Ground Tumeric
1/2 tsp. Celery Seeds
1/2 tsp. Dry Mustard
---------- Sauce------------
1 1/2 cups Ketchup
1 cup Brown sugar
1/3 cup Soy Sauce
2 tsp. Ground Ginger
2 tsp. Liquid Smoke
4 cloves Minced Garlic

Strip the membrane off the ribs with sharp knife and paper towel. Rub with the Rub and let stand a couple of hours. I cook mine on an upright smoker with full pans of water and charcoal. I also use a rib rack with thick end of ribs down. Use a half dozen wood chunks soaked in water. Don't peek for about 3 hours. If meat is pulling away from bone baste with sauce and leave on another 20 minutes. If not keep checking. Serve with Sauce.

If using Spare Ribs, make sure all the back bone is off. You can fake this because the sauce has liquid smoke in it. Cut the ribs in individual servings after rubbing. Wrap and seal tight in Foil. Put in a roasting pan and slow cook at 250 F in the oven for about 2 to 3 hours, When the is pulling away from the bone baste liberally both sides with the sauce, Take out of the foil and roast in a 350 F oven for about 30 minutes, basting again.
