Ingredients: 6 small garlic cloves - minced 3/4 c. parsley - curly, minced salt & fresh ground black pepper 4 chicken breasts - skin on, boneless or bone-in 2 T. butter - unsalted 1 lime - large, juiced

Directions:1. Grease grill and preheat BBQ to medium-high. 2. Combine minced garlic and parsley in small bowl. Sprinkle with salt and fresh ground pepper. Mix. Reserve 1/3 cup of the parsley mixture. 3. Stuff 1 tablespoon parsley mixture under the each chicken skin by gently loosening a corner and sliding your finger until skin lifts off and creates a pocket but leaving edges still attached to hold stuffing. Gently pat skin flat. Sprinkle each breast with pinch of salt and pepper. 4. Grill with lid down until chicken feels springy when pressed, about 10 minutes per side. 5. To finish, melt butter until it starts to foam. Stir in reserved parsley mixture and lime juice. Pour over chicken to serve. |

Notes: Easiest chicken ever. I'll even keep some minced garlic and parsley prepared in advance, stored in the freezer.
This dish is inspired by traditional French cooking. The classic mixture of chopped garlic and parsley is known as persillade.
Choose chicken breasts with a lots of skin coverage. Remove skin after cooking if you must. Although the skin comes out nice and crispy; try it for a treat. Bone-in chicken has extra flavour.
