6 Large ripe tomatoes
I Medium purple onion
1/4 cup basil pruee (see below)
1/4 cup pitted black olives (green work too)
1 Tbs. chopped Italian parsley
1/4 cup best-quality olive oil
dash red wine vinegar
salt and pepper to taste
6 oz creamy goat cheese (or other mild creamy cheese)

Directions:
Directions:
Core tomatoes, cut into thick slices, then cut slices into halves. Transfer to mixing bowl.
Peel onion, slice into thin rings, add to bowl, and turn gently with a spoon.
Add remaining ingredients except cheese and again turn.
Cover and refrigerate for 1 hour.
Just before serving transfer to a serving dish and crumble the cheese all over.

Basil Puree
Process or blend 7 cups washed and dried fresh basil leaves with 3 to 4 Tbs. olive oil.
This keeps well covered in the fridge or frozen
