2 c. dried great northern beans (1 pound)
1/4 lb. bacon, diced
2 medium onions, sliced
2 medium carrots, sliced
2 quarts water
1 c. celery, sliced
2-2 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried thyme
2 bay leaves
1 large potato, peeled and grated
1 ham bone or shank
2 T. lemon juice

Evening before: Wash beans, cover with water and soak overnight.

Next Morning: Saute bacon. When golden add onions and carrots, cooking until onions are tender. Drain beans, add to bacon with 2 quarts water, celery, salt, pepper, thyme and bay leaves. Add the grated potato into pot. Add ham bone. Simmer 3-5 hours until beans are tender. Remove bay leaves and ham bone. Chop any meat on ham bone and return to the soup. Before serving add lemon juice.

This recipe came from the Prairie Collection Cookbook. Mom gave me the cookbook while we were shopping at the Candleberry Crossing gift shop in Fargo back in 1987. It was put out by the Bismarck-Mandan Symphony Orchestra as a benefit. The illustrations are beautiful.
