16-18 lb Pork roast (Boston Butt or shoulder, not picnic roast)
or Beef Brisket

Seasonings (garlic salt, onion salt, seasoned salt, pepper, etc)

Directions:
Directions:
Place roast skin up and cut lines into the fat.
Place on rack in a foil-lined pan.
Season with spices.
Cook at 300º for 1 hour.
Reduce heat to 225º and cook for 11 more hours.
Take skin off by sticking fork in skin and rolling.
Remove fat and bone while still hot.
Can pull pork or keep whole.
