1onion (chopped)
1/2 c green peppers and celery
green onions
4 egg plants (peeled and cubed)
1 stick "butter"
1 tbsp garlic powder
1c Parmesan cheese
1 c bread crumbs
1/2 lb crabmeat
1lb shrimp
salt and pepper

Directions:
Directions:
boil eggplant in salt water until tender. Saute onions, pepper 2 celery in butter. Add shrimp and crabmeat. Saute until shrimp are pink. Drain and mash eggplant gradually adding bread crumbs and cheese. Stir until all contents are mixed well. When it is as thick as you desire, put in greased casserole dish. Top with crumbs and cheese and butter. Bake until brown for about 20 min. @ 375º.
