1-1/2 T. margarine or butter
3 T. all purpose flour
2 12-oz cans evaporated milk
1/2 t. salt
1/8 t. ground nutmeg
6 lasagna noodles
1-1/2 c. shredded cooked chicken
1 10-oz pkg. frozen, chopped spinach, thawed, drained, and squeezed dry
1/2 t. fresh gr. pepper
3/4 c. shredded cheese (mozzarella, asiago, or provolone)

Preheat oven to 450º. Melt margarine in a medium saucepan over medium heat. Add flour; cook 30 seconds, stirring constantly. Gradually add milk, stirring with a whisk until blended. Stir in salt and nutmeg. Cook until thick and bubbly (about 3 minutes), stirring constantly. Spread 1/2 c. sauce in bottom of 8" sq. baking pan coated with cooking spray. Layer with noodles, 1/2 chicken, 1/2 spinach, 1/4 t. pepper, and 3/4 c. sauce. Repeat layers ending with noodles. Spread with remaining sauce. Cover and bake for 25 minutes. Uncover and top with cheese. Bake and additional 5-10 minutes until lightly browned and bubbly.
