2 cans beef broth
6 oz beer
1 can of water (soup can size)
1 package Hot Italian sausages (5 or 6 pieces)
1 large chopped onion
2 chopped carrots
1 package mushroom (use fresh if possible)
1 can of drained chick peas
1/2 lb spinach- tough stems removed
1 garlic clove
pinch o thyme
(Lot of the items can be gathered from the supermarket's salad bar)

Directions:
Directions:
Remove sausage casing and brown meat (break up large pieces)-pour out oil
add in onion, carrots and mushroom. Let get a little tender (cook maybe 5 minutes)
Add in soup and beef-bring to boil and then let simmer
Add in chickpeas and spinach
Simmer at least 20 minutes. Enjoy!

I often buy the veggies at the supermarket salad bar. Then, it really only takes a few minutes to pull this together. (Longest part then just becomes browning the sausage.
I have also made with turkey sausage and black beans for more healthful approach but the regular pork Italian sausage is tastier.
