2 egg whites, salt, 1/4 tsp cream of tartar, 2/3 cup sugar, 1 tsp vanilla, 1/2 tsp almond extract, 1 c. chopped pecans

Directions:
Directions:
Beat egg whites with salt, tartar, vanilla and almond extract until foamy. Add sugar, 1 tbsp at a time, until stiff. Peaks should be shiny. Add nuts. Add food coloring if desired. Drop spoonfuls on greased cookie sheet. Place in oven preheated to 350º. Turn heath OFF. Do not open oven door all night. Cookies will be ready in the morning.
