1 lb. ground chuck

1 large onion, diced

1 lb. shredded cheese

1 8 oz. can chili, no beans

1 16 oz. can enchilada sauce

12 flat tortillas

9x13 pan greased or sprayed

Oil for cooking tortillas

Directions:
In skillet, brown ground chuck and put in colander to drain
Mix chuck and onions and ½ shredded cheese in a bowl. in a clean skillet put a little oil, heat on medium. and put 1 tortilla in
the oil and cook until soft (1 minute) turning over once. Put cooked tortilla on plate and put 1-2 spoons full of chuck mixture on top of
tortilla and roll up and put in pan rolled side down. ( This will be hot to your hands but tortillas can not be rolled unless they are soft.)
Continue this way until all of beef mixture is used, putting each one in the pan next to the last one. If there are any crumbles left sprinkle on top. Mix chili and enchilada sauce together and pour on top of everything in pan and then sprinkle the left over shredded cheese on top of that. Cook 1 hour or until bubbling at 350 ºº
