1/2 cup salt
1/4 cup pepper
1 tbsp garlic powder,oregano,celery seed,paprika,chili powder
BASTING SAUCE: 4 cups white vinegar, 4 cups water and 1/3 cup seasoning rub
2 slabs top loin ribs

1. mix rub ingredients together and set aside
2. mix together vinegar,water and seasoning and whisk while heating on stove to blend mixture
3. Baste ribs with vinegar mixture and sprinkle with seasoning
4. Cook ribs over direct heat on grill, approximately 18" above fire. coals should be 325 to 350 degrees
5. start ribs bone side down and cook until golden brown ( about 30 min ) and baste every 10 to 15 min (2 or 3 times)
6. Flip ribs and cook until golden brown about 30 min basting 2 or 3 times
7. Meat is ready when it's so hot you can't touch with your fingers
8.Flip ribs so bone is down,baste again and sprinkle with seasoning mix
9. remove form grill cut ribs in half and serve

These ribs are served at the RENDEZVOUS restaurant in downtown Memphis TN, across from the Peabody Hotel. If you've never had dry ribs try them they are delicious
