Venison Pot Roast Recipe

3 lb. venison roast or beef
3 T. flour
1/2 tsp. salt
1/2 tsp. pepper
2 T. oil
1 c. apple juice
1 c. beef broth
1 medium onion, sliced
1 tsp. thyme
1 bay leaf
8 small potatoes, peeled
6 medium carrots, cut in 2" pieces
4 celery ribs, cut in 2" pieces

Directions:
In small bowl combine; flour, salt and pepper. Rub over the roast. Brown roast in oil, in roaster. Add apple juice, broth, onion, thyme and bay leaf. Bring to a boil, cover and simmer 2 hours. Add the potatoes, carrots and celery, cook 1 hour more.
Discard bay leaf. Thicken juices if desired.
