2 T. raspberry vinegar
2 T. raspberry jam
1/3 c. oil
8 c. spinach
1 c. raspberries
3/4 c. chopped macadamia nuts
3 kiwis, opt. ( I would think you could use avocados)

Directions:
Directions:
Make the salad dressing by combining raspberry vinegar, rasp. jam and oil in the blender. (Double the recipe.) Put it in a jar. It keeps in refrigerator well.
Use 1/2 the ingredients (raspberries, nuts and kiwi's) with the spinach. Add dressing and toss. Top with the remainder of ingredients.

I got this recipe from Nancy Skirnick. It is wonderful. If you don't like nuts you really should try the macadamia nuts. They are so good.
When I was flying (NWA) we passed these out as a snack before they started handing out peanuts. I did not like nuts so I never tried them. What a mistake!!! I love them.....:)
