1/4 cup unsalted butter
2 pound leeks, white portiononly, cleaned, trimmed, sliced thinly
6 cups chicken stock
2 pounds baking potatoes, peeled and thinly sliced
salt and white pepper to taste
2 tbsp finely chopped fresh chives
1 cup of half and half cream

Directions:
Directions:
In sauce pan, melt butter over medium heat. Add leaks and sautee until soft (3-5 minutes). Add chicken stock and potatoes. Bring to boil. Reduce heat and simmer for 20 minutes. Puree. Add 1 cup of half and half and chives. Serve.
