10 onions, chopped
2 heads of garlic, finely chopped
2 bell peppers, finely chopped
1 bunch celery, finely chopped
5 large cans tomato sauce
2 cans Rotel tomatoes
1 heaping cooking spoon of flour
cooking oil
Salt and pepper to taste

Directions:
Directions:
Chop all fresh ingredients finely and keep separate.
Add cooking oil to heavy pot or black iron pot,sufficient to cover bottom of pot. Use flour to make dark copper-colored roux. Add onions, simmer until transparent or clear. Add celery, simmer 5-10 minutes. Add garlic-simmer 5 minutes.Add bell pepper and all tomato ingredients. Cook four hours on lowest setting on stove stirring at least once every 15 minutes to prevent scorching. Cool. Divide into pint containers
and freeze indefinitely. Use to replace all tomato sauces and seasonings in any recipe. Cut cooking time down to 1/2 hour.
