1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. unsalted butter, room temperature
1/2 c. sugar
1/2 c. packed light brown sugar
2 eggs
1 tsp. vanilla
3 c. old-fashioned or quick oats
1 c. dried cranberries or cherries
1 c. (6 oz.) white chocolate baking chips

Heat oven to 350º. In medium bowl, combine flour, baking soda, cinnamon & salt. In large bowl, with electric mixer, beat together butter and sugars on medium speed until fluffy, about 2 minutes. Add eggs and vanilla; beat 1 minute. On low speed, beat in the flour mixture until combined. Stir in the oats, cranberries and chips.
Onto ungreased cookie sheets, for each cookie, drop 1/4 cup of dough, spacing the mounds of dough about 3" apart.
Bake in 350º oven 16 minutes or until golden but still moist on top. Remove to racks to cool. Store in airtight container for up to 3 days or freeze.
