4 oz. fresh shallot, chopped 1 1/4 tsp. salt
3/4 cups dejon mustard 1/2 tsp. sugar
2/3 cups heavy whipping cream 1 qt. peanut oil
2/3 cup red wine vinegar
1/2 t. Ground White Pepper

Combine shallots, mustard, cream, vinegar & seasonings in Food Processer for 30 sec.
Slowly add oil while processing dressing base in thin steady streams until thickened.
