First layer:
1 c. flour
2 tbsp. sugar
Pinch of salt
1/2 c. butter
Second layer:
1 1/4 c. sugar
2 tbsp. flour
1/3 c. milk
2 1/4 c. cut rhubarb
3 egg yolks
Third layer:
3 egg whites
6 tbsp. sugar
1/4 tsp. cream of tartar

Directions:
Directions:
Combine first layer ingredients and press in 8 x 10 in. pan. Bake at 325º for 20 min.
Combine second layer ingredients and cook until thick; pour over baked crust.
For third layer beat egg whites, sugar and cream of tartar. Spread atop cooked rhubarb mixture. Brown in 325º oven for 10-15 min.
