2 unbeaten egg whites
1 1/2 cups sugar
2 teas. light corn syrup or 1/4 teas. cream of tartar
1/3 cup cold water
Dash salt
1 teas. almond extract

Directions:
Directions:
Place all ingredients except almond extract in top of double boiler (not over heat); beat 1 minute with electric or rotary beater to blend. Place over boiling water and cook, beating constantly, till frosting forms stiff peaks, about 7 minutes ( don't overcook). Remove from boiling water. Pour into mixing bowl. Add almond extract, beat until of spreading consistency, about 2 minutes. Frost cake and cover with fresh grated coconut.

Mom used the rotary beater to make this icing and her Coconut Cake for years until dad gave her an electric mixer one Christmas. She was really proud of that mixer. What a labor of love to make this cake. Romans 8:38-39
