6 egg whites
1 lb. powdered sugar
1 lb. unblanched almonds, finely ground
1 tsp. vanilla

In a large bowl, beat the egg whites until very stiff. Add 1 pound of powdered sugar and beat until thick. Divide batter into 2/3 and 1/3 portions. Set aside the 1/3 portion and save for icing. Add ground almonds and vanilla to the 2/3 portion.

Using powdered sugar as though it were flour, sprinkle it on the rolling surface. Roll out small amounts of the 2/3, as pie crust, to 1/4 inch thickness. Add powdered sugar as needed, to keep egg whites from sticking. Take the reserved 1/3 portion of egg white, and spread like frosting across the rolled pieces. Plan ahead before frosting, by eyeballing and dividing the icing equally among each rolled piece.

Preheat oven to 275º. After frosting, cut each piece into 1 x 1 1/2 strips and place on cookie sheets covered with parchment paper. Edges will be ragged. Do not try to re-roll. Sprinkle the almond strips with either red or green sprinkles. Bake at 275º for 10 -11 minutes. Do not over bake. They will appear somewhat moist when done. Store in an airtight container.
