5 lb. fresh brisket of beef
12 oz. liquid smoke

RED SAUCE:
1/3 c. water
14 oz. Heinz ketchup
12 oz. Heinz chili sauce
1/2 c. brown sugar
1 T. dry mustard

Directions:
Remove large pieces of exterior fat from brisket. Place meat in ziploc bag with liquid smoke and marinate over night. When ready to bake, discard the marinade and place meat (without any additional juice) in covered pan. Bake at 275º for 4 - 5 hours.

Remove from oven, turn the meat over in it's own juice and place the cover back on the pan while it cools. Once cooled, discard the juice. Slice meat using a slicer or sharp knife, cutting against the grain. Trim carefully to get thin slices.

To Make Red Sauce: In a saucepan, mix water, ketchup, chili sauce, sugar, and mustard. Bring to a boil until sugar dissolves, then remove from heat.

Spread half of the sauce on the bottom of a 9X13 greased baking pan. Line up beef slices so that sauce is under and in between each piece. Pour remaining sauce across the top. At this point, meat can be reheated and served, or frozen. If frozen, thaw completely before reheating.

To Heat And Serve: Pre-heat oven to 300º. LIghtly cover pan with foil and bake for 30 - 40 minutes or until bubbling.
