5 - 6 lb. chuck roast with bone

Sauce:
1 bottle ketchup
1 stalk celery
1 green pepper
1 tsp. pepper
3 T. Open Pit BBQ sauce
3 T. vinegar
1 large onion, chopped
3 tsp. Tabasco sauce
2 T. chili powder
2 T. salt
1 1/2 c. water
2/3 c. brown sugar

Cut meat into five or six pieces with 1 c. water in a large pot with
lid. Bring to boil, then return to simmer. Mix together sauce
ingredients and add to simmering heat. Simmer four four hours
covered and another four hours uncovered. Add more water, if
needed. Pull meat apart with forks and discard bone
