1 3/4 cups unsifted flour
2 teaspoons double acting baking powder
1/4 teaspoon salt
1/2 cup butter
2 finely grated lemon rind
1 tablespoon lemon juice
1 cup granulated sugar
1 large egg
2 tablespoons whipping cream

Directions:
Directions:
Sift together flour, baking powder and salt. Set aside. With an electric mixer beat butter until soft. Add lemon rind, juice and sugar, beat. Beat in egg and whipping cream. Gradually add dry ingredients. Refrigerate overnight. Roll out to 1/8 in thick, cut out cookies. Bake at 375 for 10 - 13 minutes. Cookies will be sandy colored. Variation- Combine 1 tbsp. sugar, 1/3 tsp. cinnamon, pinch of nutmeg. Sprinkle over cookies before baking.
