"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Spray jelly roll pans with cooking spray.
Wash the ribs and pat dry.

With tops up--lay the ribs next to each other in the pan--usually you can put 2 slabs on one jelly roll pan.

Salt lightly and pepper lightly on both sides of the slabs.

Make sure oven is heated to 200º before placing in the oven.

Bake rib slabs for 2.5 - 3 hours, turning occasionally.
At the end of the time, paint Barbeque sauce heavily on the top of the slabs. Bake at 350º for at least 1 more hour, sometimes more. Turn occasionally putting more sauce on after you turn so that both sides have the sauce. Test by cutting a rib off and testing--yum, yum, yummy!

Personal Notes:
One night when I was traveling with my job, I was working on email and needed some entertainment without leaving my room. So I turned on the Cooking Channel. This recipe was being described and made. I tried it once and everyone loved it so now we use this recipe all the time.
Just make sure to make enough time for baking these ribs. Rushing will not work--it takes time to make tender and keep them moist.
