1 – 1 ½ c. sugar
¼ c. flour
dash of cinnamon
dash of nutmeg
pinch of salt
3 eggs, slightly beaten
6-8 c. chopped rhubarb
pastry for 1 double-crust pie
1-2 T. butter, cut into small pieces

Directions:
Directions:
Preheat oven to 400º.

In a large mixing bowl, combine sugar, flour, cinnamon, nutmeg and salt. Add beaten eggs and rhubarb, tossing to coat.

Pour into pastry-lined 9” pie plate. Dot with butter.

Top with lattice crust. Bake for 50-60 minutes or until filling bubbles and crust is golden brown.
