¼ c. leftover mashed potatoes
1 tsp. vanilla
dash of salt
4-5 c. powdered sugar
peanut butter

Directions:
Directions:
Mix together the first 3 ingredients. Add sugar until it's a dough consistency. (It usually takes me 4-4 ½ cups). It will still be a little sticky. Roll out dough onto powdered sugar covered wax paper. Roll it up like a jelly roll. Refrigerate overnight...then slice into 1 inch slices, it sort of looks like a pinwheel. Store in an airtight container in refrigerator.
