½ c. butter
1 ½ c. sugar
2 ½ c. flour
1 tsp. baking soda
½ tsp. salt
1 egg
1 c. milk
1 tsp. vanilla
2 c. chopped rhubarb

Directions:
Directions:
Cream butter and sugar. Sift together flour, baking soda, and salt. Add egg to butter and sugar, mix well. Add milk and vanilla to flour mixture, mix well. Combine sugar and flour mixtures and mix. Add rhubarb and blend well. Pour into 9x13 pan. Bake at 350º for 25 minutes, check with toothpick, cook 5 additional minutes if needed.

Serve warm with ice cream or whipped cream. I freeze 2 cup portions of rhubarb early in the summer when it is plentiful and use it throughout the year.
