2 cups hickory chips
4 slabs pork baby back ribs
1 can beer (not light)
a smoked salt rub (he likes Butt Rub)
mop sauce—he likes a (secret)combo of barbeque and brown sugar

Directions:
Directions:
Soak hickory chips in water- set aside. Remove membrane from back of ribs. Rub seasoning all over…let sit until room temperature (about 30 minutes). Prepare grill. Stack charcoal in one corner of grill. Light. Wait until completely gray. Close bottom vents to ˝ open. Place grill rack on top. Open can of beer and place on middle of rack. Place ribs on grill away from fire. Cover- open vents on top. Add handfuls of hickory chips (placing on coals) every 30 minutes. (Optional- mop sauce all over ribs when adding hickory)Grill for about 2 hours.
