Ingredients: 1 tbsp butter or margarine 1/2 cup chopped onion or 2 tbsp instant minced onion 3/4 cup chopped green pepper 1 lb wieners, sliced 16-oz can (1 3/4 cups) pork and beans 1/3 cup chili sauce 1/3 cup catsup 1 to 2 tbsp, firmly packed brown sugar, if desired 1 can (8-oz) refrigerated buttermilk or country style biscuits 3/4 cup shredded cheddar cheese 1/2 cup crushed corn chips 3 tbsp grated Romano or Parmesan cheese 1 tbsp butter or margarine

Directions:Preheat oven to 375º. In large fry pan, saute onion and green pepper in butter or margarine until tender. Stir in wieners, beans, chili sauce and catsup. For a sweeter flavor, add brown sugar. Simmer 2 minutes. Spoon hot mixture into ungreased 12 x 8" or 9" square pan. Separate biscuit dough into 10 biscuits; pull apart each into 2 layers. Arrange 10 biscuits pieces over hot meat mixture; sprinkle with cheddar cheese. Arrange remaining biscuits to top. Combine corn chips and Romano cheese; sprinkle over biscuits. Dot with 1 tbsp butter. Bake at 375º for 20 to 25 minutes until biscuits are golden brown. Refrigerate leftovers. Makes 5 - 6 servings. |
