1 cup shortening
2 cups packed brown sugar
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/8 teaspoon cinnamon

DATE FILLING:
2 cups finely chopped dates
3/4 cup sugar
3/4 cup water
1/2 cup chopped nuts (optional)

Directions:

Preheat oven to 400º.

Prepare the filling. Combine all in a saucepan. Cook, stirring constantly until mixture thickens. Stir in nuts. Cool.

For cookies, mix shortening, sugar, and eggs. Stir in water and vanilla. Blend in remaining ingredients. Drop by teaspoonfuls about 2 inches apart on ungreased baking sheet. Place 1/2 teaspoon filling on each teaspoonful of dough and cover with 1/2 teaspoon dough. Bake 10-12 minutes. Remove immediately from the cookie sheet.
