1 c. all purpose flour
1 c. low fat ricotta cheese
1 egg
1/4 tsp. salt
1 tbsp. fresh parsley, chopped

Directions:
Directions:
Combine all ingredients in medium bowl and stir until well blended. Place dough onto a work surface and form into a roll, 12 in. long. Cut 12 equal slices.
In large saucepan bring 4 qt. of water to a boil. Add dumplings and boil gently until dumplings float to the surface. Turn dumplings once with fork and cook two more minutes. Remove dumplings with strainer and place into heated serving dish. Drizzle with melted butter if desired.
