2 c. brown sugar
1 c. cream (or 1/2 c. butter)
1/2 c. milk
3 T. butter
1 tsp. vanilla
Optional: chopped nuts

Directions:
Place brown sugar, cream and milk in a saucepan. Stir until sugar is dissolved. Cook covered over medium heat for about 3 minutes or until the steam has washed down any crystals that may have formed on sides of pan. Uncover and cook without stirring to 240º F. Add butter and stir well. Remove icing from heat and cool to 110º F. Add vanilla and beat the icing until thick and creamy. If it becomes too heavy, thin with cream. After spread on cake top with chopped nuts if desired.
