Cake:
1 c. sugar
3 eggs
1 c. flour
1 tsp. salt
1 1/3 tsp. baking soda
1/3 tsp. cinnamon
1 c. Mazola oil
2 c. grated carrots
½ c. chopped walnuts (optional)


Cream Cheese Icing

4 oz. cream cheese
1 ½ c. icing sugar
2 T. soft butter
1 tsp. vanilla

Cake:
Combine oil and sugar in large mixing bowl. Add eggs one at a time beating well after each addition. Sift dry ingredients together and add. Fold in grated carrots and nuts. Bake in a greased 9" x 13" pan at 300º F for 1 hour.

Icing:
Beat cream cheese until soft. Add butter then add sugar gradually beating until smooth. Add vanilla and ice cake when cool.
