5-6 pound beef brisket, well trimmed
onion salt
garlic salt
celery salt
1/2 bottle liquid smoke
1/4 c. Worcestershire sauce

Directions:
Directions:
Sprinkle salts on both sides of beef. If desired, press whole peppercorns into meat also. Place brisket in roasting pan, fat side up. Using a sharp knife or fork, poke several holes in the brisket. Pour liquid smoke and worcestershire sauce over meat. Bake at 350 degrees for 1 hour. Reduce oven temperature to 225 degrees and cook 6-8 hours, or overnight. Slices better if allowed to cool 15 to 20 minutes.
