2/3 lb Pork loin, boneless
2/3 T Butter
1 T Olive oil
1 Med Onion, finely chopped
1/3 Carrot, finely chopped
2/3 stalk Celery, finely chopped
1/4 t Oregano
1/4 t Basil
1/3 pinch Red pepper flakes
1/3 C Red wine
1/4 C Tomato puree
1/3 28oz Can Italian pluim tomatoes (run through
food processor)
1/3 lb pasta of choice
Parmesan cheese

Directions:
Directions:
Heat the butter and 1 tablespoon of the oil in a dutch oven over mediuim heat.

Season loin with salt and pepper, brown thoroughly.

Remove any excess fat after removing the loin from the pan.

Add the remaining 2 tablespoons of oil to the pan. Saute the chopped vegtalbes for about 5 minutes.

Add the remaining seasonings, the wine, tomato puree, and the processed polum tomatoes. Let simmer for a few minutes to blend. Stir to prevent burning.

Pre heat oven to 300ºF . Return loin to pan,.

Cover and bake until loin is tender (about 1 1/2 to 2 hours. Remove loin for pan and keep warm.

Skim any acciummulated fat from surface fo sauce.

Slice loin and serve with pasta, ladling sauce over both. Garnish with cheese to taste.
