Chicken tenders (with the tendons cut out) or boneless breasts cut into 1-inch wide strips.
Crushed tortilla chips.
Taco seasoning.
Olive oil.
Fresh ground pepper.
Butter (optional)

Directions:
Directions:
Place the chicken on a plate, wet with olive oil, and sprinkle liberally with taco seasoning. Transfer to a second plate and roll/crush tortilla chips onto meat. Place in baking dish and season with ground pepper.
Rub some remaining tortilla crumbs onto the plate with the remaining olive oil and taco seasoning and sprinkle on the chicken. Add some slivered butter on top as desired.

Bake at 350 for 25-30 minutes or until done.

Children love this recipe, especially served with tater-tots and raw vegetables. Kids over 40 will like it too with seasoned rice, re-fried beans, and a salad.
