4 large boneless chicken breasts
1 cup milk
1 cup bread crumbs
1 cup Parmesan cheese
1 tbsp. parsley
salt and pepper
1 cup white wine
1/4 cup lemon juice
1 tbsp. capers (drained)
1 cup olive oil
1 can chicken broth

Directions:
Directions:
Preheat oven to 350 degrees. Pound chicken fillets until almost flat, put in milk and soak for 10 minutes.

Mix bread crumbs, Parmesan cheese, and parsley. Dredge chicken in mixture. Add olive oil to skillet and braise chicken on each side until lightly brown, then place in buttered baking dish, let sit.

Remove all but 1 tbsp. of oil from skillet. Leave drippings from chicken. Add white wine and boil until it is reduced by one half. Add lemon juice, capers, and chicken broth and reduce for 5 minutes. Pour over chicken.

Bake for 20 to 25 minutes.
