3/4 cup mashed potatoes (you can use instant potatoes - two servings = 3/4 cup)
1 - 16 oz package of powdered sugar
4 cups flaked coconut
1 teas almond extract

Chocolate Coating

Directions:
Directions:
Mix all ingredients except chocolate coating. Drop mixture by heaping teaspoonfuls onto waxed paper. Roll into balls; chill 1/2 to 1 hour until firm. (If mixture is too soft to form balls, chill before shaping)

Prepare Chocolate coating. Using tongs or forks, dip balls in coating, turning to coat evenly. (Keep coating over hot water while dipping balls, but be very careful to not let any water drip into the chocolate!!) Remove balls from coating and place on waxed paper or wire rack. Chill until firm.

The very first time I made this candy, we were living in an apartment with other young couples. One afternoon just before Christmas, I agreed to watch our neighbors little boy. He was quite energetic, which is a nice way of saying he was a rotten. I had to keep him busy, so I pulled out this recipe, and we made a "Gift" for his mom and dad together. He had a ball (no pun intended) and so did I. He was proud of himself as he carefully placed candy on the plate to give to his folks, and his mom was shocked that I would ever agree to babysit for her again.
