For the Ribs: 2 slabs spare ribs (about 6 lbs. total), rinsed and patted dry
(I figure 1 lb. per person)

1 tbsp. each: salt, freshly cracked black pepper, and chili powder (additional Cayenne pepper and/or Cajun seasoning optional)

For the Barbeque Sauce:
1 cup ketchup
1 cup brown sugar
1 cup cider vinegar or white vinegar
garlic powder and cayenne powder optional, to taste
****Can be doubled or tripled for extra sauce

Ribs:

Preheat oven to 350 degrees. Mix salt, pepper and spice(s) in a small bowl. Arrange ribs in a shallow roasting pan in a single layer. Sprinkle spice mixture evenly over ribs, then rub it in. Cover pan tightly with foil, and bake for 1 hour.

Reduce oven temperature to 325 degrees. Uncover pan and bake for one more hour. (Can be made to this point up to 2 days ahead; cool completely, wrap and refrigerate. Remove from refrigerator one hour before grilling.)

Grill ribs, turning and brushing with barbeque sauce, until glazed and slightly charred, about 15 minutes.

Barbecue Sauce:
Combine ingredients in a saucepan and simmer, uncovered, for about 45 minutes to an hour.

Everyone who has these ribs wants the recipe. It’s a great meal to cook ahead of time, and then grill with the barbeque sauce right before serving. Make sure you have millions of napkins.
