2 tablespoons olive oil
1 bay leaf
1 onion chopped
8 cups Great Northern beans, cooked
1 carrot, peeled and chopped
½ pound orzo pasta
1 celery stalk, chopped
1 pound ham slices, chopped
1 garlic clove, minced
1 tablespoon fresh parsley, chopped
1 (14 ounce) can diced tomatoes
6-8 cups chicken broth

Directions:
Directions:
Heat olive oil in a soup pot and add onion, carrot and celery. Cook for 3 to 5 minutes until tender and add the garlic. Cook 1 minute and add tomatoes, broth and bay leaf. Bring to a boil. Reduce heat to a simmer, cover and simmer the soup for 20 minutes. Uncover, add pasta and cook for 5 to 8 minutes until tender. Add beans and ham and heat through. Add parsley and serve immediately. Serves 6
