4 baking potatoes, peeled and diced
8 slices bacon, cooked & crumbled
1 3/4 tsp salt
1/2 lb sharp cheddar cheese, grated
1/2 c cream
1/4 c sour cream
4 Tbsp butter
1/4 c chopped chives or gr onion
1/4 tsp pepper

Directions:
Directions:
Place potatoes and 1 tsp salt in a heavy pan and cover with water. Bring to a boil. Reduce the heat and simmer until potatoes are fork tender. Drain and return to the pot. Add the cream, butter, remaining 3/4 tsp salt and pepper. Place the pan over med low heat and mash. Add the bacon, grated cheese, sour cream and chives. Stir until combined. Season, to taste.
